The nutritional and antioxidant properties of extra virgin olive oil have been known since ancient times and today are also confirmed by scientific research. The production of extra virgin olive oil is one of the top Tuscan known in the world. In keeping with tradition, our organic farm produces extra virgin olive oil that's classified as Toscano Colline di Firenze IGP (protected geographical indication). Membership in the Consorzio per la Tutela dell’Olio Extravergine di Oliva Toscano IGP guarantees and protects the authenticity of a valuable product, the result of a careful and constant work at all stages of production.


Our olive trees are grown organically, which means among other things the total absence of chemical fertilizers and pesticides, minimum tillage, grass, maintenance of hedges in order to ensure biodiversity. In addition, the plant density is very low in order to protect the typical landscape of Tuscan tradition. This ensures low production yield in the best quality.

The olives are harvested directly from plants with manual stripping and are taken to the mill within 48 hours. The oil is extracted exclusively cold with mechanical techniques (without the use of chemical solvents) and is not filtered. The intense green color, the scent herbaceous and fruity taste with a hint of artichoke due to the high content of polyphenols, witness all the effort we put into its production.
Our oil so it is able to ennoble even the foods as simple as a bruschetta or a plate of vegetables in pinzimonio.

 

The wine


Our farm, located in the Chianti Colli Fiorentini area, also produces an excellent red wine made from sangiovese grapes.
